Some elements that are primary resources in our alimentation often generates reluctance because of their features.
In this specific case the focus is on roots and tubers in which the external appearance doesn't match with the inside in terms of colors, surface, texture and substance.
Each one of the three vertical recipes describe the process to prepare one dish based on a single vegetable through a vertical movement, using gravity, the primary force of the earth itself.

The aesthetic is a direct reference to the “advertising look” constantly oriented in making everything look appealing and desirable.
